SIT30816-Certificate III in Commercial Cookery (Current)

Duration: 52 weeks [4 terms] including term breaks.

This course will provide students with hands-on experience in areas from the preparation and cooking of meats through to cost effective menu development.

Cambridge International College works closely with each student to develop a strong theoretical knowledge base, as well as providing a practical experience in real workplace commercial kitchens at various well known establishments around Perth – all practical cookery training is delivered off-site.

A full knife/tool kit and uniform are provided to every student enrolled in this course

SIT40516-Certificate IV in Commercial Cookery (Current)

Duration: 78 weeks [6 terms] including term breaks. This includes the full SIT30816-Certificate III in Commercial Cookery qualification.

This duration is shortened to 26 weeks [2 terms] if a student has completed the SIT30816 Certificate III in Commercial Cookery

Students will gain an in-depth understanding of kitchen management, finance management and team work

SIT40516-Certificate IV in Commercial Cookery

  • Total number of units – 33 (26 core units plus 7 electives units)

SIT50416-Diploma of Hospitality Management (Current)

Duration: 52 weeks [4 terms] including term breaks, with the successful completion of the SIT40516 Certificate IV in Commercial Cookery

Duration is shortened to 26 weeks [2 terms] if a student has successfully completed the SIT40516 Certificate IV in Commercial Cookery.

This qualification gives students a broad understanding of hospitality, and begins to explore in substantial depth, theoretical concepts relating to: business operations, hospitality budgeting, workplace diversity, legal knowledge for business, rostering, and service quality.

SIT50416: Diploma of Hospitality Management

  • Total number of units – 28 (13 core units plus 15 electives units)

Full-time study

Delivery of the course consists of 20 hours per week of scheduled classes on campus and Offsite practical training in commercial kitchens (for Cert III in Commercial Cookery)

Recognition of Prior Learning

Students may be able to gain credits in their chosen course by measuring skills acquired through work, life experiences or qualifications obtained from formal studies or training. AQF Qualifications or Accredited Courses and Statements of Attainment issued by other registered education providers are recognised by Cambridge International College. Application for RPL must be submitted before the commencement of classes.

Assessment

Students are advised of the assessment requirements at the beginning of each unit. The assessment process will include a variety of tasks to demonstrate competence in the required skills and knowledge. Assessment continues throughout the program until the student either achieves competency in the assessment tasks or further training needs are identified and addressed.

Career Opportunities

Graduates of the SIT30816 Certificate III in Commercial Cookery will be qualified for employment as a cook or commis chef.

Graduates of SIT40516 Certificate IV in Commercial Cookery will have the skills to become a qualified cook, commis chef, kitchen manager or owner operator.

Graduates of SIT50416 Diploma of Hospitality Management will be prepared to take on a managerial role in any hospitality industry sector such as restaurants, hotels, motels, clubs, cafes and other hospitality establishments.

Opportunities for further studies

Students who complete the SIT30816 Certificate III in Commercial Cookery may choose to undertake a range of Certificate IV level qualifications within the Tourism, Travel and Hospitality Training Package including the SIT40516 Certificate IV in Commercial Cookery.

Students who complete the SIT40516 Certificate IV in Commercial Cookery may choose to undertake a range of Diploma level qualifications within the Tourism, Travel and Hospitality Training Package including the SIT50416 Diploma of Hospitality Management.

Students who complete the SIT50416 Diploma of Hospitality Management may choose to undertake a range of Advanced Diploma level qualifications within the Tourism, Travel and Hospitality Training Package including the SIT60316 Advanced Diploma of Hospitality Management.
